Kimchi Bokkeum is a super simple dish that you can eat with rice or in a lettuce wrap. You can make the simple version for a quick meal or make a fancier version to impress. It’s very easy to add additional ingredients to make a version catered to your liking.

Ingredients
1 cup Sohi Kimchi (fermented at least 3 weeks)
1/4 lb of pork
1/4 yellow onion
2 scallions
2 teaspoons of sesame oil
Directions
Cut pork into bitesize cubes.
Put into a pot with water covering the pork. Bring water to a boil.
Once boiling, cook for 5 additional minutes. Make sure the pork is cooked through. To check, cut one cube open down the middle and make sure it is not pink. If pink, continue to cook and repeat check every 3 minutes until no longer pink. Once pork is cooked through, discard water and put pork aside.
In a frying pan add the sesame oil. Cook on high until the sesame oil is hot. Once hot, reduce heat to med and add kimchi, onions and pork.
Stirfry the kimchi and pork until kimchi is tender. About 8-12 min.
Add scallions and cook until scallions wilt.
Remove from heat and serve.
