Sohi, is a feminine korean name that means small yet shining. This implies that no matter how “small” the person, she’s blindingly bright and smart.  Sohi is the chosen name of Chong Suk Pak, the originator of the kimchi recipe of Sohi Kimchi.

As a child, Chong Suk was told by a fortune teller that if she continued to be called by the name Chong Suk that men would chase her like “flies attracted to poo” [her exact words].   Not wanting to be bothered by pesky skirt chasers, Chong Suk was given the new name “Sohi” by the fortune teller.  Small in stature, the name Sohi sums up Chong Suk perfectly.  Always smiling and aiming to please, Sohi is a walking ball of sunshine with formidible skills in the kitchen.  With recipes learned and passed down from her mother, Sohi honed and evolved the korean tradition with her own variations improving flavor and technique.

Having enjoyed the fruits of his mother’s cooking for his entire life, Sohi’s son Daniel decided to learned her recipes and share them with family and friends.  That led to this brand with the name Sohi to honor his mother’s legacy and continue her tradition of authentic korean home cooking.

Although most people see kimchi in it’s already fermented stage, kimchi can be enjoyed fresh as well.  Although unavailable in most stores in fresh form, fresh kimchi tends to be spicier with crisper leaves, with sharper and more intense flavors.  In the fresh stage, kimchi goes very well with simple subdued flavors like pan fried tofu or sliced pork belly. 

As it ferments the flavors tend to meld together in the best possible way while mellowing out the heat and adding a sourness from the fermentation.  This is the stage most people recognize kimchi accompanying everything from rice and korean barbeque, to noodles, tacos, burritos, and even pizza.  Kimchi is good with everything! 

Even well aged kimchi has a purpose being perfectly ripe for cooking in stews and used in a multitude of dishes like kimchi pancakes and kimchi fried rice.

Absolutely!  There are many great recipes you can make with kimchi.  Uncooked kimchi is great on its own but cooked kimchi is just a completely different experience.  Just sauteing kimchi in a pan alters the flavors lessening the sharpness of the sour notes and creating a warmer comforting taste.  Mix with a little rice and pork and you have a quick satisfying meal.
